i saw something like that a few years ago in pop-sci or something, a gel that would harden on impact, then relax again. i'd love to see this in a helmet or spine protector for my motorcycle gear and see waht it could really do!
not quite a gel... but flexible
d3olab.com . looks like they have some pricey gloves and a bunch of ski related stuff but no motorcycle jacket. i would love a motorcycle jacket with this stuff, esp. a good spine protector.
